Why I Love This Recipe

Firstly, Moroccan Chicken Patties are a great way to spice up your typical dinner rotation! This simple recipe is quick to make and bursting with bright citrus and sweet, bold Moroccan flavor. It's a salty and savory dish that is perfect for hurried weeknights!

These low calorie, low carb, protein packed patties are delicious served on top of cauliflower rice and next to a scoop of Thai Inspired Cucumber Relish (for a little international mash up😉) or Lemon Garlic Green Beans. Any other roasted, steamed or sautéed vegetable would make great sides for this meal. You could also eat it on a gluten free bun or lettuce wrap with mayo.

Substitute shrimp for chicken tips

This recipe can also be made with 1lb of peeled, deveined shrimp finely chopped in a food processor. You want to end with small chunks, not paste.

Batter tips

Although you'll notice this batter is a little on the wet side, it fries up to golden brown perfection and sticks together well!

Good store bought pure citrus juice

Also, I don't mind zesting lemons, but I really dislike the mess that comes from juicing them. If you feel the same, Santa Cruz is a great brand that makes pure fruit juices.

Tips for keeping these patty tender

Moreover, to keep tender more evenly flavored Moroccan Chicken Patties, spread the raw meat out as much as possible in the mixing bowl. This increases the amount of surface area the seasoning comes in contact with and decreases the amount of time you have to work to get the mixture fully combined.

Storage tips

Store in an airtight container in the refrigerator up to 4 days. Re-heat in a skillet over medium low heat, the oven at 325 degrees Fahrenheit until warmed through about 8 minutes, or microwave on medium high heat 2-3 minutes.

Equipment

  • measuring cups and spoons
  • 1 medium mixing bowl
  • 1 Large skillet
  • 1 large plate
  • 1 wide spatula

Ingredients

  • several sprays of cooking spray* I typically use avocado cooking spray
  • 1 lb ground chicken
  • 2 tablespoon Homemade Moroccan Seasoning**
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ½ cup almond flour
  • 2 eggs beaten
  • zest of 1 lemon
  • 2 tablespoon lemon juice

Instructions

  • Spray a large skillet with cooking spray and heat over MEDIUM until extremely hot.
  • Spread the raw chicken out as much as possible in the mixing bowl. Sprinkle evenly with Moroccan Seasoning, salt, black pepper, almond flour and lemon zest. Pour beaten eggs and lemon juice on top.
  • Use your hands to gently combine the ingredients. Do this only until all the spices/seasonings look and feel evenly distributed. Separate meat into 6 roughly even sections and make about 4" wide patties.

  • Add patties to the very hot skillet, leaving room between each one so they can form a golden brown crust. Sear 4-5 minutes on the first side and flip cooking an additional 2-3 minutes. Transfer to a plate while you cook the remaining patties. It usually takes me 2 batches to get all of the patties cooked. Serve warm with your favorite sides!

Notes
