Creamy Pineapple "Rice" {Paleo, Whole30}

Gluten Free, Dairy Free, Paleo, Whole30, Vegan

This tropical flavored, frozen cauliflower rice recipe is a sweet, creamy side dish. It's quick and easy to make coming together in only 16 minutes! Serve Creamy Pineapple "Rice" with grilled or baked chicken, pork, or with your favorite stir fry.

Why I Love This Recipe

Creamy Pineapple "Rice" is simple to make and bursting with sweet citrusy pops of pineapple in cream coated, tropically spiced cauliflower rice. Plus, it's a quick, healthy dish to make especially on short notice.

This recipe is also a grain free and veggie loaded side dish. It's delicious served with savory meatballs, pork chops, chicken or fish. Or, for a vegan option serve this dish with some pan fried firm tofu or with fried or scramble eggs.

Cooking Tips

Make sure to add coconut milk last and cook no longer than 1-2 minutes to prevent curdling.

This is one of my favorite brands of coconut milk. It isn't overly watery and has a good amount of thick coconut cream inside. Because the cream tends to separate, make sure to thoroughly shake the can before opening or whisk it together after opening.

Equipment

  • 1 Large skillet
  • 1 Wooden Spoon

Ingredients
  

  • 2 tablespoon refined coconut oil
  • 1 small onion small diced
  • ½ teaspoon salt + extra pinches of salt
  • ¼ teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon granulated garlic powder
  • ⅛ teaspoon ginger powder
  • couple dashes black pepper
  • 10-12oz bag frozen cauliflower rice break apart in bag
  • ½ 20oz can pineapple tidbits drained
  • ½ cup full fat coconut milk

Instructions
 

  • Heat oil in skillet on MED-LOW until melted and warm, about 2 minutes. Add diced onion and pinch of salt to skillet and sauté, stirring occasionally until tender. About 3-5 minutes.
  • Add salt, cumin, coriander, granulated garlic powder, ginger powder, black pepper. Sauté stirring frequently until aromatic, about 30 seconds.
  • Increase heat to MEDIUM, add cauliflower rice cook until thawed about 1 minute.
  • Add pineapple tidbits. Sauté stirring occasionally until cauliflower and pineapple begin to get brown spots.
  • Add coconut milk. Stir to combine and cook to heat through about 1 minute.

    I really liked this dish. I substituted a couple of items I did not have. I think it would have been even tastier if I had all the ingredients called for!
