- 2 mini seedless cucumbers sliced into thin half moons
- 3 tablespoon white or red onion thin sliced
- ½ medium jalapeno thin sliced width-wise
- 1 tablespoon minced cilantro leaves
- 3 pinches salt
- 2-3 teaspoon honey
- 2 tablespoon rice vinegar
In a medium mixing bowl add sliced cucumbers, onions, jalapenos, cilantro, salt, honey and rice vinegar. Use a silicone spatula or a spoon and mix until well combined. Serve immediately or refrigerate and serve chilled.
