Avocado BLT Chicken Salad {Paleo, Whole30, Keto}

Gluten Free, Dairy Free, Soy Free, Paleo, Whole30, Keto

This hearty chicken salad is protein pack with chunks of tender chicken and chopped bacon. It's coated in a refreshing avocado lime mayonnaise that is seasoned with earthy chili powder and cumin. Finally, it's scooped on top of a fresh bed of butter lettuce and garnished with sweet cherry tomatoes!

Why I Love This Recipe

This healthy dish is quick and easy to make coming together in under 20 minutes! It's cool and refreshing thanks to the tangy, creamy avocado lime mayonnaise yet is hearty, keeping you full all day. Perfect for brunches, cookouts or for a fun change in your weekday lunchtime routine!

Avocado BLT Chicken Salad uses paleo, Whole30, and keto compliant ingredients! You can use rotisserie chicken, chicken breasts you've cooked at home, or spring for high quality Whole30 compliant canned chicken. Beware, it's really expensive! Here is a link to one made by Wild Planet brand whose only ingredient is chicken. I haven't been able to find a budget friendly Whole30/paleo canned chicken. If you know of one please post what you've found in the comments below.

Cooking Tips

Add the cherry tomato halves when it's time to serve. Otherwise, they will leak in the chicken salad and can make it watery. Adding them right before serving ensures the freshest, most tasty meal!

The lime juice in this Avocado BLT Chicken Salad has a dual purpose. It keeps the avocados from browning and also provides delicious sweet tanginess.

Avocado BLT Chicken Salad {Paleo, Whole30, Keto}

Equipment

  • 1 large rimmed baking sheet
  • Aluminum foil
  • 1 medium mixing bowl
  • 1 fork
  • 1 silicone spoon

Ingredients
  

  • 1 pkg bacon
  • ⅔ cup mayonnaise Whole30 compliant brand*
  • 2 medium avocados
  • 2 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 3 pinches salt
  • several dashes black pepper I used 4 dashes
  • 3 pinches crushed red pepper flakes
  • 1.5 lbs pulled rotisserie chicken or 3 12.5oz cans of chicken*

Instructions
 

  • In a medium mixing bowl add mayonnaise, avocados, and lime juice. Use a fork to mash avocado and mix ingredients together. You can leave the mixture as chucky or smooth as you prefer. I typically have it in between, leaving small chunks of avocado that the fork can't easily mash.
  • Add chili powder, cumin, salt, black pepper and crushed red pepper flakes and stir to combine. Add chicken and stir to combine. Fold in chopped bacon.
  • When you're ready to serve, add a handful of lettuce to a plate or bowl. Top with chicken salad and sliced cherry tomatoes. Garnish with additional bacon if desired. Refrigerate leftovers (without tomatoes).

Notes

*You can also use 1 ½ lbs of chicken breasts cooked at home. Or use three 12.5oz cans of chicken. Make sure to read the label.
