This easy vegetable side dish is creamy and crunchy, with a hint of tanginess! Lime juice and cilantro lend bright fresh flavor and is balanced by the rich, earthiness of ground cumin. Try this healthy recipe on top of tacos, carnitas, and burrito bowls!

Why I Love This Recipe

Cumin Lime Coleslaw is perfect for last minute cooking or can be made ahead of time and stored to eat later. The longer this recipe sits in the refrigerator to more developed and scrumptious the flavor become.

Using items you likely have on hand, this easy 6-ingredient dressing comes together quickly. Creamy mayonnaise, bright lime juice, acidic white wine vinegar, earthy cumin, salt and black pepper combine to coat fresh shredded cabbage, carrots, and cilantro leaves. It is a fun take on traditional coleslaw that's perfect to bring to potlucks, barbecues, and cookouts.

I adore making this recipe anytime we have a Mexican themed dinner. Not only is this coleslaw a convenient side, it's also delicious when used as a fresh, crunchy topping for tacos, burritos, or power bowls. I also really enjoy a crisp topping for soups and will use Cumin Lime Coleslaw to top Mexican flavored soups or chili.

Cooking Tips

Use one large mixing bowl for this recipe. Add the dressing at the bottom of the mixing bowl, under the veggies instead of on top. This allows the the creamy dressing to be more evenly dispersed.

Cumin Lime Coleslaw is naturally keto friendly, gluten, dairy, and soy free. In order to make it paleo and Whole30 compliant, use homemade mayonnaise or good quality store bought mayo.

In order to make this recipe vegan friendly, opt for a vegan mayo. One of my favorite mayonnaise brands, Chosen Foods, offer a vegan version of mayonnaise. It is thinner than typical mayo. So, start out using a little less than this recipe calls for, probably about ¼ cup to get a better consistency.

Equipment

  • 1 large bowl
  • measuring cups and spoons
  • 1 silicon spatula

Ingredients
  

  • ⅓ cup good quality mayonnaise
  • 1 tablespoon lime juice
  • 1½ teaspoon white wine vinegar
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon cumin
  • 1 16 oz bag coleslaw mix
  • ⅓ cup fresh cilantro leaves

Instructions
 

  • In a large mixing bowl combine mayonnaise, lime juice, white wine vinegar, salt, black pepper, and cumin to make coleslaw dressing.

  • Add bag of coleslaw mix and fresh cilantro leaves and use a large silicon spatula or spoon to mix until fully combined. Serve right away or refrigerate and serve chilled.
