Homemade Guacamole {Paleo, Whole30}

Gluten Free, Dairy Free, Paleo, Whole30

Creamy, with the right amount of crunch, homemade guacamole is brightened up by lime juice and cilantro while poblano peppers add a touch of spice. Great as a quick appetizer or condiment, this healthy 10-minute recipe is easy to make and perfect for game days, Taco Tuesdays, and Cinco de Mayo!

Why I Love This Recipe

Guacamole is one of my favorite foods! It's main ingredient, avocado, is a nutrient dense fruit. Avocados contain healthy fats, folate, are rich in fiber and have lots of different vitamins and minerals. Plus, they are naturally low in carbs and sugar!

This chunky guacamole has crunchy pieces of fresh diced poblanos and onions and is brightened by fresh lime juice and chopped cilantro.

It is a quick recipe that can be used many different ways. Of course, it is a delicious dip for tortilla chips and topper for tacos, fajitas, carnitas, enchiladas, etc. However, I also love using it to top chili, soups, scrambled or fried eggs, burgers and sandwiches.

Cooking Tips

Guacamole tends to turn brown quickly when exposed to oxygen. Use plastic wrap and press it flush against the top of guacamole to help prevent browning in the refrigerator. It can be stored up to 3-4 days in the refrigerator.

This version of Homemade Guacamole is made without tomatoes, but feel free to add some if you prefer. I would add about 2 tablespoon diced Roma tomatoes to start out and then add more to taste if desired.

You can also up the spiciness of this recipe if you prefer. To increase the spice level replace 2 tablespoon small diced poblano with 2 tablespoon diced jalapeno without seeds. To increase it even more add some seeds from the jalapeno to taste.

Not everyone is a cilantro fan. If this is you, you can make Homemade Guacamole without cilantro. It will still be fabulous!

Equipment

  • 1 Medium bowl
  • 1 fork

Ingredients
  

  • 4 avocados *not large sized
  • ½ teaspoon salt
  • 2 tablespoon poblano peppers small diced
  • 1½ tablespoon cilantro rough chopped
  • 1 tablespoon onion small diced
  • 1½ tablespoon lime juice

Instructions
 

  • Scoop out avocado into a medium bowl. Mash avocado well with a fork. Add salt, poblano pepper, cilantro, onion, and lime juice.

  • Stir until well combined. Serve immediately or chill to eat later.
