Why I Love This Recipe

At restaurants, my husband almost always orders a simple oil and vinegar blend for his salads. He knows these are alway safe from gluten and dairy containing ingredients and he really enjoys the flavor. His love of this simple dressing inspired me to create this slightly dressed up version of an easy classic!

The base of this vinaigrette is rich extra virgin olive oil and fruity, tangy white wine vinegar. Lemon juice adds bright, citrusy notes, while a Homemade Italian Seasoning lends savory zest to this delicious vinaigrette!

Furthermore, this healthy 4-Ingredient Italian Vinaigrette is made with wholesome ingredients! Not only is it paleo and Whole30 compliant, it is also low in sugar and contains less than 1g net carb per serving.

Re-emulsifying after refrigeration

The oil will solidify in the refrigerator. You can either set it out at room temperature for 15-20 minutes then whisk or shake to recombine. You can also warm it more quickly using warm water. Hold the dressing container under hot running water for a couple minutes to return it to a liquid state. Or, sit the container in a bowl or glass measuring cup filled with warm water. Give it a good shake before serving.

Make sure you shake this salad dressing well before every use. This helps recombine the vinegar, oil, and spices that like to separate while it sits undisturbed.

Homemade Italian seasoning

For the exact flavor intended in this recipe, use my Homemade Italian Seasoning. While you can use other store bought Italian Seasonings, the flavor results will vary.

Storage

Since 4-Ingredient Italian Vinaigrette doesn’t have fresh herbs or fresh garlic, its shelf life is longer compared to salad dressing that do. You can store this vinaigrette for about 5 days covered at room temperature. Or you can store it in the refrigerator for up to 2 weeks.

Because the spices can get stuck in the smaller holes of most salad dressing containers, I typically use a 10 oz or 12 oz jar with a lid to store this vinaigrette.
