Thick and creamy, this dressing is packed with the cheesy, savory flavor of traditional Caesar made with clean, whole food ingredients! This 5-minute egg and oil emulsion uses nutritional yeast for cheesiness and dried garlic plus fish sauce to create that special funky, umami flavor we love in Caesar dressings.

Why I Love This Recipe

Firstly, this scrumptious dressing is quick and easy to make! It’s ready in only 5 minutes and lasts 2 weeks in the refrigerator. Because it's a hit with the our whole family, I typically double it every time I make it! We use it as a salad dressing, dip, and sandwich spread.

Like authentic Caesar dressing, this homemade recipe is created from an egg and olive oil emulsion. Then it's perfectly seasoned with nutty, cheesy nutritional yeast, savory coconut aminos, fish sauce and granulated garlic for a hint of funkiness, salt, black pepper, and lemon juice for brightness.

Unlike traditional Caesar dressing, I replace anchovy fillets with fish sauce for simplicity without losing the unique punch of umami. Additionally, nutritional yeast replaces the parmesan cheese typically found in Caesar dressings keeping this recipe deliciously dairy free.

Moreover, this made from scratch dressing tastes so much better than store bought! It's made with paleo and Whole30 compliant ingredients and has only 1g of carbs per 2 tablespoon serving! Dairy Free Caesar Dressing has a fresh, savory, clean taste with which even the best quality store bought brand can’t compete.

The best oil for this dressing

Extra virgin olive oil is too strong of a flavor for this recipe. Instead, choose light olive oil. When mixed with eggs, it emulsifies creating the smooth creamy texture of this dressing.

Fish sauce recommendation

With only two ingredients (sea salt and anchovies), Red Boat makes an excellent quality fish sauce that is Whole30, paleo, and keto friendly.

What if I don't own an immersion blender?

You can use a blender, food processor, or immersion blender to make this dressing. I typically use an immersion blender. It might take a little longer for the dressing to fully emulsify if using a food processor or blender. Be patient, make sure to start with room temperature ingredients and it will all come together! 

USING PASTEURIZED EGGS

Pasteurized eggs are heat treated to kill harmful bacteria that cause foodborne illness without cooking the eggs. In the past, I was able to find pasteurized eggs at local organic, health food stores and larger chains like Kroger. I did use them in recipes when I was pregnant. However, due to the most recent bird flu of 2024, the amount of pasteurized eggs available has significantly been impacted.

When they are available, they are also typically more expensive than unpasteurized eggs. Another way to minimize risk while being budget friendly is to pasteurize eggs at home. This link provides tips for 2 different methods.

I typically buy good quality organic free range eggs and have not splurged for pasteurized eggs since my youngest son was born. It's a matter of personal preference so do what feels right for your family!

Storage tips

Store Dairy Free Caesar Dressing refrigerated in an airtight container up to 2 weeks.

Equipment

  • 1 hand held immersion blender, blender or food processor*
  • 1 12 oz or larger mason jar with lid or medium bowl
  • measuring cups and spoons

Ingredients
  

  • 1 egg room temperature** pasteurized eggs tips***
  • ⅔ cup light olive oil
  • 2 tablespoon pure lemon juice
  • 1 tablespoon nutritional yeast
  • 2 teaspoon coconut aminos
  • 1 teaspoon fish sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon granulated garlic powder

Instructions
 

  • Place all ingredients in a 12 oz or larger mason jar or medium bowl. Use an immersion blender on MED-LOW and blend until creamy about 1-2 minutes. Serve right away or refrigerate in an airtight container up to 2 weeks.

Notes

*It might take a little longer for the dressing to fully emulsify if using a food processor or blender. Be patient, make sure to start with room temperature ingredients and it will all come together. 
**To easily get eggs to room temperature place in a bowl of warm water for 1-2 minutes.

    Isn't is unsafe to add raw egg? If someone was to make this and become ill couldn't this come back on you for giving the suggestion of adding raw egg? I am more concerned about making my family ill.

      While it’s rare to become sick from raw eggs, it is still a risk. If you are concerned about contamination, check with your local market to see if they carry pasteurized eggs. I have also added a section above with information on pasteurized eggs that includes a link with steps to pasteurize eggs at home.
