Gluten Free, Dairy Free, Soy Free

This gluten free, dairy free take on classic waffles are quick and easy to make! They have the perfect amount of sweetness with a crisp exterior and fluffy interior. The best part: you can re-heat leftovers in a toaster or waffle iron for a quick and yummy weekday breakfast!

Why I Love This Recipe

Gluten Free Classic Waffles are just as delicious as restaurant waffles, with the added bonus of being cheaper and allergy friendly! Lightly crisp while staying soft on the inside, this simple breakfast recipe is perfect for the whole family.

Unlike many homemade waffle recipes, there is no separating and whipping eggs necessary for this batter. All that's needed in this quick dish is room temperature ingredients (see tips below) and this batter comes together in less than 5 minutes.

My kids especially love when I double the recipe to warm up for a special school/work day treat. Our typical go to is traditional butter and pure maple syrup topping. Or, sometimes we'll top with fresh fruit and dairy free whipped cream. My husband will even eat them plain because they taste that good!

Cooking Tips

Not a fan of potato starch? You can replace with arrowroot starch. There will be mild textural differences as arrowroot causes the waffles to brown faster. But both, along with high fat content, help prevent a soggy waffle. I tried replacing it with tapioca flour, but the waffle would burn every time.

If you have a square waffle maker, these re-heat well in a toaster. Otherwise, for circular waffles you can reheat directly in the waffle iron you used. Since we always have 2 leftover waffles, I typically reheat them this way for my boys for an occasional before school treat.

For quick room temperature eggs: place eggs in a small bowl and cover with lukewarm water. Let sit for 1-2 minutes. For quick room temperature milk, heat in a microwave safe container for 60-90 seconds on 50% power. Do this only until lukewarm to touch so you don't accidentally cook the eggs.

How To Keep Waffles Warm

To keep waffles warm and extra crispy while cooking: Warm oven to 175 degrees and put a wire rack on top of a rimmed baking sheet. Put them single layer on wire rack and keep in oven until you’re ready to serve.

Other sources recommend keeping waffles warm at 200 degrees Fahrenheit. However, I've noticed it drys out the waffles and makes them overly crispy. I personally prefer a waffle with a lightly crisp exterior and a soft fluffy interior and I've had success with this slightly lower oven temperature.

Equipment

  • 1 waffle maker
  • 2 mixing bowls
  • measuring cups and spoons
  • 1 Whisk
  • 1 silicon pastry brush or skip this and use cooking spray instead
  • 1 2 cup measuring cup

Ingredients
  

Dry Ingredients

  • 1¼ cup brown rice flour
  • 1¼ cup almond flour
  • ¾ cup potato starch
  • ¾ cup maple sugar or coconut sugar
  • ¾ teaspoon baking soda
  • 3 pinches salt

Wet Ingredients

  • 1¾ cup almond milk
  • 2½ teaspoon lemon juice
  • ¾ cup neutral oil
  • 1 tablespoon pure vanilla
  • 4 whole eggs room temp
  • 2 tablespoon neutral oil to brush on waffle iron

Instructions
 

  • Turn on waffle iron and let warm while you mix ingredients.
  • In a 2 cup measuring cup or medium bowl, combine the almond milk and lemon juice. Set aside while you mix the other ingredients. This will turn into the buttermilk for your waffle batter.

  • In a medium mixing bowl combine all dry ingredients: brown rice flour, almond flour, potato starch, baking soda, maple sugar, salt. Whisk to combine.
  • In a separate large mixing bowl, whisk together the wet ingredients: neutral oil, pure vanilla, eggs, and buttermilk mixture.
  • Whisk dry ingredients into wet ingredients until well combined and smooth.
  • When waffle iron is fully heated, brush on neutral oil to prevent waffle sticking. Use a measuring cup to scoop cup batter to fully cover waffle iron without leaking over. Cook until waffle iron indicates it's fully heated again and waffle is golden and crispy*. This is different for every iron.
  • Repeat until you use all batter. Serve warm with your favorite toppings!

Notes

*If you are using a waffle iron that doesn't flip: when the waffle iron finishes cooking, carefully flip the waffle and cook an additional 30-60 seconds to get more crispness on the back side of the waffle.
