Gluten Free Apple Cinnamon Waffles {Dairy Free}

Gluten Free, Dairy Free, Soy Free

Inspired by the warm flavors of autumn these waffles are lightly crispy outside, fluffy on the inside and filled with apple cinnamon spice. Top with a spoonful of optional warm fried apples for a boost of apple cinnamon flavor!

Why I Love This Recipe

Gluten Free Apple Cinnamon Waffles are lightly sweet with warm cinnamon notes, a crisp exterior and soft, fluffy interior. No only are they ready in 30-minutes, but you can also re-heat leftovers in a toaster or waffle iron for a quick, yummy weekday breakfast!

While they are delicious served as is or with traditional butter and maple syrup, Gluten Free Apple Cinnamon Waffles are extra special when sprinkled with saucy fried apples. Juices released from fresh apples combine with butter, sugar, and cinnamon to create tender apples coated in a light syrup. It's the perfect, sweet syrupy topping for a warm, delicious start to cool fall days.

Unlike many homemade waffle recipes, there is no separating and whipping eggs necessary for this batter. All that’s needed in this quick dish is room temperature ingredients (see tips below) and this batter comes together in less than 5 minutes.

Tips for a crispy waffle

Not a fan of potato starch? You can replace with arrowroot starch. There will be mild textural differences as arrowroot causes the waffles to brown faster. But both, along with high fat content, help prevent a soggy waffle. I tried replacing it with tapioca flour, but the waffles burnt every time.

If you don't have a waffle iron that flips, try manually flipping the waffle and cooking an extra 30-60 seconds to get additional crispness on the back side of the waffle. If you have a waffle iron that flips, go you! You don’t need to worry about this step.

Reheating instructions

If you have a square waffle maker, these re-heat well in a toaster. Otherwise, for circular waffles you can reheat directly in the waffle iron you used. Since we always have 3 leftover waffles, I typically reheat them this way for my boys for an occasional before school treat.

Quick room temperature ingredents

For quick room temperature eggs: place eggs in a small bowl and cover with lukewarm water. Let sit for 1-2 minutes.

For quick room temperature milk, heat in a microwave safe container for 30-60 seconds on 50% power. Do this only until lukewarm to touch so you don’t accidentally cook the eggs when combining the wet ingredients.

Keeping Waffles Warm

To keep waffles warm and extra crispy while cooking: Warm oven to 175 degrees and put a wire rack on top of a rimmed baking sheet. Put them single layer on wire rack and keep in oven until you’re ready to serve.

Other sources recommend keeping waffles warm at 200 degrees Fahrenheit. However, I've noticed it drys out the waffles and makes them overly crispy. I prefer a waffle with a lightly crisp exterior and a soft fluffy interior and I've had success with this slightly lower oven temperature.

Equipment

  • 1 waffle maker
  • 2 mixing bowls
  • measuring cups and spoons
  • 1 Whisk
  • 1 small bowl
  • 1 silicon pastry brush or skip this and use cooking spray instead
  • 1 medium skillet
  • 1 vegetable peeler

Ingredients
  

Dry Ingredients

  • 1 cup brown rice flour
  • 1 cup almond flour
  • ¾ cup potato starch
  • ¾ teaspoon baking soda
  • ⅛ teaspoon salt
  • 4 teaspoon cinnamon

Wet Ingredients

  • ¾ cup neutral oil I use light olive oil or melted refined coconut oil
  • ¾ cup unsweetened apple sauce
  • 1 cup almond milk Room temperature**
  • 4 whole eggs Room temperature***
  • 6½ tablespoon honey about ⅓ cup + 2 tbsp
  • 2¼ teaspoon apple cider vinegar
  • 1 tablespoon pure vanilla

Optional Fried Apple Topping

  • 3 tablespoon dairy free butter
  • 3 large apples peeled and diced****
  • 4 teaspoon sugar I use coconut or maple sugar
  • 1½ teaspoon cinnamon
  • 1 pinch salt

Instructions
 

  • Turn on waffle iron and let warm while you mix ingredients.

Mix the Dry Ingredients

  • In a medium mixing bowl add: brown rice flour, almond flour, potato starch, baking soda, salt, and cinnamon. Whisk until well combined.

Mix the Wet Ingredients

  • In a medium mixing bowl add: oil, apple sauce, milk, eggs, honey, lemon juice, and pure vanilla. Whisk until well combined.

Make the batter

  • Whisk dry ingredients into wet ingredients until fully combined and smooth.

Bake the Waffles

  • When waffle iron is fully heated, brush on neutral oil to prevent waffle sticking. Using a measuring cup or ladle scoop batter to fully cover waffle iron without leaking over. Cook until waffle iron indicates it's fully heated again and waffle is golden and crispy.**** This is different for every iron.
  • Repeat until you use all the batter. Enjoy warm as is or make the optional fried apple topping while the waffles are baking.

Optional Fried Apple Topping

  • While waffles are baking:
    Add dairy free butter to a medium skillet over MEDIUM-LOW heat. When butter has melted add diced apples, sugar, cinnamon, and salt. Stir to combine. Cook stirring occasionally until apples are softened to your liking about 7-10 minutes. Serve warm.

*Honey crisp, pink lady, or granny smith apples hold their shape well when frying.
