Gluten Free Apple Cinnamon Waffles {Dairy Free}

Crispy outside, soft inside these waffles and are filled with warm apple cinnamon flavor and topped with sweet fried apples.

Dry Ingredients
- 1 cup brown rice flour
- 1 cup almond flour
- ¾ cup potato starch
- ¾ teaspoon baking soda
- ⅛ teaspoon salt
- 4 teaspoon cinnamon
Wet Ingredients
- ¾ cup neutral oil I use light olive oil or melted refined coconut oil
- ¾ cup unsweetened apple sauce
- 1 cup almond milk Room temperature**
- 4 whole eggs Room temperature***
- 6½ tablespoon honey about ⅓ cup + 2 tbsp
- 2¼ teaspoon apple cider vinegar
- 1 tablespoon pure vanilla
Optional Fried Apple Topping
- 3 tablespoon dairy free butter
- 3 large apples peeled and diced****
- 4 teaspoon sugar I use coconut or maple sugar
- 1½ teaspoon cinnamon
- 1 pinch salt
Mix the Dry Ingredients
In a medium mixing bowl add: brown rice flour, almond flour, potato starch, baking soda, salt, and cinnamon. Whisk until well combined.
Mix the Wet Ingredients
In a medium mixing bowl add: oil, apple sauce, milk, eggs, honey, lemon juice, and pure vanilla. Whisk until well combined.
Bake the Waffles
When waffle iron is fully heated, brush on neutral oil to prevent waffle sticking. Using a measuring cup or ladle scoop batter to fully cover waffle iron without leaking over. Cook until waffle iron indicates it's fully heated again and waffle is golden and crispy.**** This is different for every iron.
Repeat until you use all the batter. Enjoy warm as is or make the optional fried apple topping while the waffles are baking.
Optional Fried Apple Topping
While waffles are baking:Add dairy free butter to a medium skillet over MEDIUM-LOW heat. When butter has melted add diced apples, sugar, cinnamon, and salt. Stir to combine. Cook stirring occasionally until apples are softened to your liking about 7-10 minutes. Serve warm.
