- 1½ tablespoon neutral oil I use refined coconut oil
- 1 medium onion small diced
- 2 lbs ground beef I used 85/15
- 2 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon oregano
- 1 teaspoon sweet paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 tablespoon tomato paste
- 1¼ cup chicken broth
Heat oil in a large skillet over MEDIUM heat until very warm. Add diced onions and 2 pinches of salt. Sauté stirring often until onions soften about 3-5 minutes.
Add ground beef breaking apart into very small pieces with a wooden spoon. Cook stirring and continuing to break up meat until mostly browned about 5-7 minutes.
Add the spice blend: chili powder, cumin, oregano, sweet paprika, salt, and black pepper. Stir to combine. Cook stirring frequently until fragrant about 30 seconds- 1 minute.
Stir in tomato paste to combine with meat and onion mixture. Cook stirring frequently until toasted and deeper red in color, about 1-2 minutes.
Stir in chicken broth, bring to a boil. Lower heat to MEDIUM LOW and let simmer until thickened about 3-5 minutes. Enjoy!
