Paleo Pecan Pie With Honey & Cinnamon {Gluten Free, Dairy Free}

This sweet pie is loaded with a pecan topped rich and gooey honey filling and baked in a tender, flaky gluten free crust.

- 1 Paleo Pie Crust*
- 2½ cups pecans halves
- 2 teaspoon Saigon cinnamon
- 2 teaspoon vanilla
- 1 cup honey
- 4 eggs, beaten room temperature
- ⅔ cup maple sugar
- ¼ cup melted ghee
Prepare pie crust per directions. Par-bake with dried beans, dried rice, or pie weights instead of poking holes in the crust. Otherwise, the filling will leak through the bottom. Allow to cool for 5-10 minutes.
Pre-heat oven to 350℉.
Add pecans to the bottom of pie crust.
Whisk together Saigon cinnamon, vanilla, honey, eggs, and maple sugar. Make sure the ghee is cooled prior to adding it to the filling mixture so it doesn't cook the eggs. Add about 2 teaspoon melted ghee and stir into mixture to temper eggs. Add the rest of the melted ghee and stir well.
Pour filling mixture over pecans.
Either cover entire pie loosely with tin foil or cover the pie crust snugly with a pie shield as gluten free crusts brown quickly and burn easily** and set on a rimmed baking sheet for easy oven removal.
Bake 45-50 minutes until center mostly set. It should have very little to no wiggle. See notes below to prevent the pie crust from burning.

** I personally prefer to cover the pie with foil for the first 30 minutes. Next remove the foil and very carefully lay a pie shield around the crust for the next 10 minutes (because the crust will start to brown slightly even with the shield on). Then, remove the shield and cook until the pie is set about 5-10 more minutes.
