Ham Egg And Potato Breakfast Skillet is inspired by a ham and potato dinner that my mother-in-law makes. It has always been a family favorite and is usually served with sautéed vegetables for dinner. When I was looking for easy breakfast options I decided to add eggs, bell peppers and fajita seasoning to turn it into a yummy breakfast dish. Thanks, Nana Sherry!!
Ham Egg And Potato Breakfast Skillet is great for meal prep and makes enough for leftovers. Plus, it reheats well and tastes great for three to four days. It is a hearty, low calorie breakfast that filled with vegetables and protein to keep you fueled all morning. This recipes tastes great as is, but is also yummy when served with salsa and guacamole.
Cooking Tips
Boiling the potatoes first ensures that they are cooked through. Avoid using yellow potatoes. I've found them to be too soft and they fall apart during cooking.
I use my Homemade Fajita Seasoning in this recipe. Feel free to use this or replace with your favorite fajita seasoning. Italian Seasoning would also be yummy in this recipe.
Finally, finding good quality ham that is paleo and Whole30 compliant can be challenging. Applegate Farms typically has a paleo friendly ham that's also a budget friendly option. It can be found at stores like Whole Foods Market and Fresh Thyme. However, the Whole30 options that I've found are scarce and pretty expensive. I found this Pedersons Farms version on Amazon.
Meal prep tips
This recipe is great for meal prep!
- Dice the ham, green bell peppers, and onions then place them in separate air tight containers in the refrigerator.
- There are a few options for the potatoes:
- You can peel, dice and cook them the day you plan to make this recipe.
- You can peel, dice and submerge them in water in a covered dish. They can be kept in the refrigerator overnight or up to 24 hours this way.
- Or, you can boil them and refrigerate them in an air tight container the night before you plan to make this recipe.
- Finally, follow steps 4-6 to bring this meal together!

Ham Egg And Potato Breakfast Skillet
Equipment
- 1 Large skillet
- 1 medium skillet
- 1 small bowl
- 1 large colander
- measuring spoon
- 1 spatula, wooden spoon
Ingredients
- 3 medium russet potatoes peeled and 1" diced
- 1 teaspoon salt
- 1 tablespoon neutral oil
- 6 eggs beaten
- pinch salt
- 1½ tablespoon neutral oil
- 2 medium green bell peppers 1" diced
- 1 medium onion 1" diced
- 2 pinches salt
- 16 oz ham 1" diced uncured, no sugar added
- 3-4 teaspoon Homemade Fajita Seasoning*
- ½ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- In a large deep skillet add potatoes and enough cold water to cover. Turn burner to HIGH, bring to a boil, add 1 teaspoon salt. Reduce heat to MED or MED LOW to maintain a consistent boil. Cook until fork tender about 7-10 minutes.
- While potatoes are boiling, cook the eggs. Add 1 tablespoon neutral oil to a medium skillet over MED heat. Add eggs and a pinch of salt to a small bowl and beat with a fork or whisk. When oil is melted and skillet is warm add egg mixture. Cook until mostly done, remove from burner and set aside.
- Drain the potatoes in a large colander. Rinse and wipe out any remaining starchy residue from the skillet.
- Place skillet on burner over MED heat and add 1½ tablespoon neutral oil. When skillet is warm add onions and peppers with 2 pinches of salt. Cook stirring occasionally with a wooden spoon or silicone spatula until starting to soften about 2-3 minutes.
- Add the cooked potatoes and diced ham into the pan. Sprinkle evenly with 3-4 teaspoon Homemade Fajita Seasoning, ½ teaspoon salt, and ⅛ teaspoon black pepper. Stir to distribute the seasoning and then cook stirring occasionally until ham and vegetables start to get some browned spots about 7-10 minutes.
- Chop up eggs into bite sized pieces with wooden spoon or silicone spatula. Then, stir into ham, potato and pepper mixture. Cook for another 30 seconds until eggs are warmed through. Serve warm.
