This quick cucumber relish is refreshing and crisp with a bright, sweet and tangy flavor! Plus, this simple condiment is low calorie ready to eat in only 5 minutes!

Why I Love This Recipe

Firstly, Thai Inspired Cucumber Relish is simple to make and bursting with bright, tangy flavor! It's perfect served alongside Asian Meatballs, Grilled Tropical Chicken Thighs, or on top of your favorite Asian flavored chicken, pork, and seafood.

Moreover, I was inspired to create this recipe after mine and my husband's favorite local Thai restaurant permanently closed. This relish boasts bright and crisp cucumbers, crunchy sweet onions, mild jalapeño heat, fresh citrusy cilantro, sweet honey, and tangy rice vinegar. This healthy, bright condiment is perfect served alongside meals with peanut/satay sauce or in Asian rice bowls.

Letting the flavors 'marry'

Also, while this easy recipe can be served immediately, the taste gets even better the longer it sits. Waiting 15 minutes or more allows all of the delicious flavors to "marry" giving this condiment a stronger more developed flavor!

What vinegar can be used?

Finally, Rice vinegar can be found in the vinegar aisle of most grocery stores. You could also use white vinegar or white wine vinegar if you prefer.

Storage Tips

Healthy Thai Inspired Cucumber Relish can be stored in an airtight container in the refrigerator for 3-4 days.

Equipment

  • 1 Medium bowl
  • measuring cups and spoons

Ingredients
  

  • 2 mini seedless cucumbers sliced into thin half moons
  • 3 tablespoon white or red onion thin sliced
  • ½ medium jalapeno thin sliced width-wise
  • 1 tablespoon minced cilantro leaves
  • 3 pinches salt
  • 2-3 teaspoon honey
  • 2 tablespoon rice vinegar

Instructions
 

  • In a medium mixing bowl add sliced cucumbers, onions, jalapenos, cilantro, salt, honey and rice vinegar. Use a silicone spatula or a spoon and mix until well combined. Serve immediately or refrigerate and serve chilled.
